What is the Chaîne des Rôtisseurs ?

Quite simply, the Chaîne is a national and international society of friends, who all have in common their love of fine dining and a desire to share this passion. The Chaîne is an ancient organisation, founded in 1248, and it is reputed both in France and abroad. It is now present in 126 countries spread over the five continents.

Becoming a member of the Chaîne enables you to participate in local, national and international events, which we call Chapitres. The different Chaîne clubs are called “Bailliages”, and their president the “Bailli.”

There are many reasons for becoming a member: a wish to meet like-minded gourmets, and to travel and taste the best dishes from the finest restaurants. It is also an excellent network for business people. Whatever the case may be, members will all say that belonging to the Chaîne means being in a group which represents quality, and is synonymous.

Who are the links in the Chaîne?

The links of the Chaîne are all people with good taste. We appreciate the fine things in life: friendship, gastronomy and good wine. We like to eat wonderful food together, to chat about its origins and how the chef prepared the dish. We respect the products, the producers and the cooks!

We are delighted to have so many professional members; the best restaurants and caterers. These vital links in the Chaîne share our traditions and preserve their savoir-faire for future generations.

History

The “Corporations” were created in the Middle Ages. They were of capital importance in the development of artistic and moral values in Europe, in music, literature, art and theatre…and also in gastronomy.

In 1248, under Saint Louis, King of France, the « Ayeurs » Corporation was founded. As time passed, this became the “Rôtisseurs”, and received Royal approval in 1610. It happily grew until 1789, when the French Revolution stopped all cooperations.

The seeds of “knowing how to eat and drink” had already been sown, and in the 1930s the Chaîne returned. Ar the end of the war and of rationing, cooking again became possible, and in 1950 the new Chaîne des Rôtisseurs was founded.

Nowadays in the world the Chaîne des Rôtisseurs is the foremost association of gastronomy.

The Sainte Chapelle: edified by Louis XII (just before creating the Chaîne des Rôtisseurs…)

The colours of the ceiling of the chapel remind us of those of the Chaîne, and the cross of our crossed skewers.

Our future

We wish to preserve the Chaîne and its values, to welcome new members and see the Chaîne develop in France and abroad.

An excellent dish is a mixture of tradition and innovation, and we like to think that this same formula applies to the Chaîne.
